Hey ya’ll!! What did you think of the Top 10 Summer Drinks from last week?! Did you have a chance to make it through the list by sample yet…LOL! I am still working on it, it was such a hectic week for us that I feel like I barely had time to breathe!
I recently started a new job, which comes with much excitement and of course the “Oh my God what was I thinking!?”. But to be honest, the working from home is becoming QUITE comfortable for me (maybe because my gardens are in full bloom and it gives me a nice peaceful place to go for my breaks). Regardless, I am on the phone with my customers all throughout the day and am constantly wanting to snack, but I don’t want them to hear me chomping away! So that’s why this week I decided to go back to making myself a smoothie as a late morning snack.
This is a nice versatile recipe, you can use any kind of fruit you prefer to customize it to your taste, and as you can see below, I felt like using some peaches, mangoes and strawberries to add into mine!
Doesn’t that just look so yummy?? Guess what? IT WAS! And it was so easy to make…I literally threw the ingredients into the blender, pulsed for a minute and bam my smoothie was ready to drink. And if you are thinking “oh gosh I can’t make this, I don’t even have a good blender”…uhhh just look at my picture…do you see my blender?! That thing is not even close to top of the line and it did the job just fine! So what exactly did I put into my smoothie…
- 1c fresh spinach (you can use a little less if you want, it does have a pretty strong taste)
- 1/2c unsweetened vanilla almond milk
- 1/4c plain Greek yogurt (I used 0% m.f. as I am lactose intolerant)
- 1c frozen fruit of your choice (I used the welch’s peach, strawberry, mango blend)
That’s it guys! You throw it all into the blender, mix it up (if it is too runny you can add either 2 ice cubes or another little bit of Greek yogurt to thicken) and then get ready to enjoy! As I mentioned, you can add whatever fruit you like, but I recommend to use a frozen variety…for a couple of reasons! First of all, it will help to thicken your smoothie. Secondly, you can enjoy fruits that are out of season (uhhh PEACHES) and still have it taste like you just grabbed them from the farmers market. Mmm I am ready for another one!
