These are a super tasty peanut butter square, we always make a couple of trays so that everyone gets enough for their trays (as everyone who tries them, LOVES THEM!).
They are a little finicky as far as timing (when it comes to the icing) but if you follow along below they will turn out every time! Just ensure that all of your ingredients are measured out ahead of time.
Cooking Time: under 5 minutes (requires chilling before icing)
Makes: One 8×8 pan (usually we cut into about 24 smaller squares)
Ingredients
- Base
- 1/2 c brown sugar (light not dark)
- 1/2 c corn syrup
- 1 c peanut butter (we use smooth)
- 2 c corn flakes
- 1 c rice krispies
- 1 tsp vanilla
- Icing
- 1/2 c brown sugar (light not dark)
- 1 tbsp butter
- 3 tbsp milk
- 1 c icing sugar (powdered sugar)
Directions
- Base
- mix together the brown sugar and corn syrup, microwave for 1 minute on high and stir. Microwave for an additional 45 secs to 1 minute until bubbly and the sugar is dissolved.
- add in cereals, peanut butter and vanilla
- press into an 8×8 pan lined with parchment (trust me, they will stick if your pan is unlined!).
- cool completely
- Icing
- boil brown sugar, butter and milk for 1 minute until it bubbles
- add icing sugar and beat with fork until it starts to thicken
- moving quickly, pour over base mixture and cool
- cut into desired size for squares
This is my favourite one to clean the spatula afterwards…it is just so darn yummy! The picture on the left is the base only, the icing hadn’t gone on yet!

- Do you have a boy to shop for between 7-15? Anything Nerf fits very well in here! Trust me! I have two little nephews (8 and 11) who are obsessed with this stuff, and it doesn’t seem to matter how many more they get, they love them all the same!
- Frozen…need I say more!? Girl or boy, you can’t go wrong with anything from this incredible franchise! I found an adorable beach set with watering can for my baby niece (2) and just know she will love the addition of Frozen characters on her new toys.
- Lego…again, need I say more? There are so many different styles of sets that you can buy for someone as little as 3 and all the way up to teens! Although generally the larger sets are quite pricey, you can find some great deals at this time of year you just have to look for them.
- Pjs. Yup, I went classic on ya’ll! Every kid needs new jammies for Christmas! It has been a tradition for my family since I was a wee one, and probably the thing I look forward to the most! You can get their favourite character, or colours. Have fun with it!
- Looking to go a little more educational? If you’re like me, you think it is crazy how many unnecessary toys kids get at Christmas time! I opt for things like books (this year it was one of the LeapReader books for my nieces set) and even a fun Crayola Carver (which allows them to customize crayons to give to friends and family) for my youngest nephew!
