Christmas Baking Frenzy- Snowball Cookies

On the 13th day of baking The Olive Blogger gave to me..a post with a delicious Snowball recipe!!!

It has been so much fun posting for you guys everyday, and I am sad to say that today is the final day of the 13 days (although that doesn’t mean I won’t keep posting yummy treats for you to enjoy!). I saved this recipe for the last day knowing how much ya’ll would enjoy it!

The Snowball is a classic goodie ball from Newfoundland (two of our bakers are “Newfie” so you know it’s a GOOD one!). It is loaded with coconut, oats and a hint of cocoa, and has a delicious fudgey center! This was my first year actually eating them (if you recall from a previous post I was not a huge coconut fan) and let’s just say that I may need to make more to replenish my supply for my goodie trays…UH-OH!!!

This is a great one to have the kiddos help out with, as it requires a final rolling in coconut to coat the outside, and how much fun they’ll have! The picture below shows our littlest helper having some fun with the coconut after all the rolling was done. I guarantee that this final recipe will be in your top three, and hope that you enjoy it every bit as much as I do!

We are having our annual Christmas party with friends today, so I will be sure to let ya’ll know what they thought of all the cookies, bars and other goodies we have made over the last 13 days together! And with that, I sign off for a couple days so I can go and recharge and enjoy what the Christmas season has to offer <3
