Snowballs

A classic recipe from Newfoundland, a delicious chewy snowball! If you like coconut this is the cookie for you! Not only is it loaded with coconut inside, but you also roll it in a bath of coconut to finish it off and make it look like a “snowball”!

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup milk
  • 3 tbsp cocoa powder
  • 2 cups rolled oats
  • 1 cup fine coconut
  • coconut for rolling

Instructions

  • In a large saucepan over medium-high heat, bring butter, sugar and milk to a boil
  • Allow to boil for about 5 minutes without stirring (should be at a rolling boil) while you let this boil mix together your rolled oats and coconut and set to the side
  • Add cocoa and remove from the heat
  • Add in coconut/oat mixture and stir to combine with the wet mixture
  • Let cool and roll ball in coconut to coat
