This classic lemonade recipe uses fresh strawberries and freshly squeezed lemon juice to make a refreshing drink you can enjoy all Summer long!
There is really nothing better on a hot day than a large glass of tangy sweet lemonade, and when you add fresh strawberries into the mix you will be reaching for the pitcher to refill your glass as you sit by the pool sipping away your day.
If you have been around awhile then you might remember my Rhubarb Lemonade Recipe which is a little bit more tangy than this one, and a great drink to make in the Spring when rhubarb is in all its growing glory. This strawberry version uses the same method of creating a simple syrup from the fresh fruit and other ingredients that turns into a concentrate that you dilute to make your lemonade whenever the craving hits.
The thing I LOVE about doing it this way is that I can freeze the concentrate and have it for all throughout the year – you simply freeze it in smaller containers in and then pull one out to mix when you are ready for it. How awesome is that for last minute company (especially if you have a pool and you are the GO TO Summer house!?).
Lemonade Ingredients
While the ingredients for this lemonade recipe are straightforward, there are a couple of things I want to point out.
Strawberries
For the strawberries, make sure to use fresh berries (frozen ones hold more water and will be more diluted in the end). I like to give mine a gentle rinse under water and set them on a reusable towel until I am ready for them so that the excess water soaks up.
Lemons
When shopping for the lemons to use in this recipe I like to point out that you can use whichever type you prefer, though keep in mind that some varieties are sweeter than others.
I normally buy whatever my local grocery store has in stock (and since we live in Canada, we don’t get all the fresh varieties my friends in the States get year-round).
The lemons I buy are more than likely the Lisbon variety, which are large and a bright yellow, unlike the Meyer lemon which is smaller and darker in color. Deep into the Summer months where I am I can usually find bags of the Meyer lemons which tend to be a lighter lemon flavor, and since I prefer BOLD when making lemonade, I stick to the plain old variety I can get year-round. But, you do you my friends, and use whatever beautiful yellow lemon variety you like best!
How to Make Easy Strawberry Lemonade
- Wash and prepare strawberries – cut off the tops of the berries and slice into quarters and put into a medium bowl.
- Wash and zest lemon using a fine rasp or grater. Put zest into a small bowl. Then cut lemons in half and juice using a handheld juicer or a fork. Strain the lemon juice to remove seeds and pour over prepared strawberries.
- In a medium saucepan pour water, sugar and strawberry lemon mixture along with the lemon zest and bring to a boil over medium-high heat. Allow to cook for 20 minutes, stirring occasionally, until the strawberries are tender and begin to break down.
- Remove from heat and gently mash the mixture, allow to cool for 10 minutes before straining into a large bowl.
- When you are ready to make a pitcher of lemonade we suggest a 3:1 ratio; 3 cups of water to 1 cup of concentrate.
Freezing Lemonade Concentrate
As I mentioned earlier, I love to have the concentrate for this Strawberry Lemonade on hand on all year long, and to do that I simply freeze it into smaller containers.
Once you have prepared the concentrate let it cool before moving it into freezer safe containers and put into your freezer standing upright. They are good for at least 6 months, based off of my personal experience! And the lemonade tastes like you just made it, yum!
