Mouthwatering Chocolate Pizzelle Cookie Recipe

Pizzelle Cookies are simple and delicious Italian cookie that are similar to a waffle in flavor (think yummy hints of vanilla). These Chocolate Pizzelle Cookies take it one step further with a decadent twist on the classic cookie.

The pizzelle cookie is a slightly soft cookie (though it can be made a little crunchier if you prefer) that pairs perfectly with a cup of tea or coffee on a cool day. They often have a beautiful pattern on them from the Pizzelle Iron as well which makes them a nice gifting cookie for your cookie exchanges!

The fun thing with a pizelle cookie is that you can really make it your own by changing out the extracts (from vanilla to anise or maybe orange or lemon for a citrus twist!) and like we did here, add in some cocoa for a chocolatey twist.

There are a couple of things to keep in mind when making your pizzelle which I will outline below to ensure you have success each and every time you make them (and trust me, you will make them A LOT once you try this simple recipe).

Tips and Tricks for the perfect Pizzelle Cookies

First and foremost the success of your cookie all depends on your tools and ingredients. Make sure you are using fresh baking powder and not one that has been in the back of your baking cupboard since before Grammas time.

As I mentioned above you want to invest in a Pizzelle Iron to get the pretty designs and also the right thickness for your cookie – a waffle maker will not do it as it is meant to be for a thick and fluffy waffle.

When lifting your cookies off of the iron you want to use something that won’t scratch the surface – I like to use a bamboo skewer as I find it has a slight bend to it which allows me to gently poke underneath the Pizzelle and give it a little lift so I can get it onto my plate to cool (see my video below on how I do this when making some of my traditional Vanilla Pizzelle).

When it comes to the overall firmness of your Pizzelle it really is a personal preference. I like mine to have that nice golden color and a slight crisp to them, but soft on the inside. For this you want to leave them on the iron for about 1 and a half minutes vs the usual 1 minute that is recommended by most of the machines.

Step-by-Step Making of Pizzelle Cookie

  1. Combine dry ingredients into a medium bowl until incorporated.
  2. Add your eggs, butter and vanilla to the dry ingredients and whisk to fully combine.
  3. Preheat Pizzelle Iron (following instructions from your machine). Once heated add a dollop of Pizzelle batter to the iron in each of the cookie spots and close.
  4. Allow to cook for about 1 minute and then use your bamboo skewer to remove and let cool.
  5. Add a beautiful dusting of powdered sugar to your cookies right before enjoying!

Chocolate Pizzelle Cookies

A classic Italian Pizzelle Cookie with a chocolate twist!

Prep Time 5 minutes
Cook Time 2 minutes
Total Time 2 minutes

Ingredients

  • 1 cup flour
  • ¼ cup cocoa powder
  • ½ granulated sugar
  • 1 teaspoon baking powder
  • 3 eggs
  • ½ cup butter, melted and cooled
  • 1 teaspoon vanilla extract
  • ¼ teaspoon Kosher salt
  • ¼ cup powdered sugar for garnish

Instructions

  1. In a medium bowl combine flour, cocoa powder, sugar, baking powder and salt.
  2. Add in eggs, melted butter and vanilla and use a whisk to fully combine.
  3. Preheat Pizzelle Iron according to manufacture instructions. Once heated add a dollop of batter to the center of each spot of the iron and gently close. This is trial and error but I generally like to start with a medium cookie scooper amount.
  4. Allow to cook for 1 minute (or up to 1 and a half if you like a little crisp) and use a bamboo skewer to gently lift and remove cookies to a plate to cool.
  5. Sereve with a dusting of powdered sugar and enjoy!

Notes

Add in 1 teaspoon of finely ground espresso powder for a nice flavor change.

Pizzelle also go nicely with a scoop of ice cream on top!
