I have included not only our original recipe, but Mr. Olive’s “Boozy Amaretto” version as well! I HIGHLY recommend you try both! As I said above, this recipe is great for breakfast, brunch and even weeknight dinners. Who doesn’t love a good stack of pancakes?!
For this recipe you will need: flour, sugar, baking powder, milk, vegetable oil, egg, salt. Amaretto is needed for the boozy version.

Why we love our Fluffy Pancakes…
As far back as I can remember, my hubby and I have been suckers for a good Sunday breakfast…and that always has included pancakes!
Many years ago when we were still renting an apartment I remember thinking that there had to be a better way to making pancakes that didn’t include a bland boxed mix. And so the quest for the perfect pancake recipe began!
Our main requirements were pancakes that were fluffy, buttery, light, and didn’t require buttermilk (I mean who even has that stuff on hand…like ever?!).
I went through so many “tester” recipes and for many Sundays, since that was my only day off at the time, we wound up eating bland, dense, chewy, and sometimes inedible pancakes.
I can’t even tell you exactly when this recipe came to be, all I know is that it was A LOT of trial and error. But alas, here we are friends, with the best Fluffy Pancakes for you and your family to enjoy for years to come.

This one is super simple! It is all about your heat control of your pan/griddle (see below why we prefer a griddle for ours). Make sure you have your pan heating while you are prepping your pancake batter. Set the heat to medium and leave it be…no butter, no oil, nothing gets added to your pan!
As you cook your pancakes you will want to watch for them to get nice and bubbly before flipping them over. You can always test to see how golden they are by gently lifting the edge of one with your spatula…if it is still a pale white color then leave it be. I suggest about 2 minutes/side for that perfect golden color you are looking for.
Two very simple things; fresh baking powder and the right amount of mixing!
Milk, the answer is always milk! The dairy helps with the consistency of the mixture because of the fat content; something that water just doesn’t have.
How do you make Light and Fluffy Pancakes?
The simple answer – don’t over mix your batter! You want to ensure that your wet and dry ingredients are combined, but you don’t want to mix it to a “smooth” consistency like so many recipes will tell you to do. It is so important to pay attention to this step if you are looking to keep your pancakes as fluffy as possible.
We also suggest using less liquid! Yep! When we updated this post we even updated our already awesome recipe to adjust for this. After making this recipe for years I began to notice that by eliminating even a little bit of the milk in our original pancake recipe, it would come out even fluffier than before! So, with this update we changed our milk from 1 1/3 c to 1 1/4 and trust me it makes a nice difference!
The last tip I have for making light and fluffy pancakes is to ensure you are using fresh ingredients. Now, I am not telling you to get some chickens and harvest fresh eggs, or milk a dairy cow…no friends, I am referring to the simple dry ingredient – baking powder! If your baking powder is over 6 months old then I suggest you get a new box for this recipe, and trust me, you’ll be making these pancakes so often that you will need to replace it again before that!

As I just mentioned, we ALWAYS use our Griddle for making our pancakes (and so many other things too!). It has a great sized cooking surface which allows us to get at least 6 pancakes going at a time, which is awesome for ensuring everyone can eat breakfast together and not have to wait for the last batch to be ready! Easy Fluffy Pancakes
This recipe for Fluffy Pancakes is the last one you will ever need! They are thick and light and soak up the right amount of syrup, making each bite as delicious as your last!
Ingredients
Ingredients (original):
- 1 1/4 c flour
- 2 tbsp sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1 1/4 c milk
- 3 tbsp oil, *we use vegetable oil
- 1 egg
Ingredients (Amaretto):
- 1 1/2 c flour
- 2 tsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- 1 c milk
- 1/2 c Amaretto
- 3 tbsp oil
- 1 egg
Instructions
For either recipe:
- Sift your dry ingredients together in a small bowl
- In a medium bowl mix together all of your wet ingredients (be sure to lightly beat your egg at this point to break the yolk down)
- Add your dry and wet ingredients together, mix
- DO NOT over mix, it is okay to have some lumps in your batter (this is the key to keeping them fluffy!)
- Cook pancakes until bubbles appear (see photo) and then flip, let cook another 30 sec to 1 min

Are there substitutions available for gluten /dairy free?

Hi Sue,
I haven't personally tried to make them dairy or gluten free. That being said, you can try an almond or oat milk in place of the regular milk to make it dairy free. For the gluten free aspect, I don't think they would rise and be quite as fluffy if you tried to use another type of flour (i.e. almond flour). If you do try it please let me know!
