– Russet Potatoes – Shallots – Garlic – Parmesan Cheese

– Aged Cheddar – Flour – Butter – Salt, pepper and Smoked Paprika

Melt butter over medium heat, add shallot with garlic and sautee

Add flour and stir until golden. Season with salt, pepper and smoked paprika. Add in milk

Add potatoes, stir to coat. Bring mixture to a simmer over medium heat and cook.

Pour half of the potato  mixture into prepared casserole dish and top with half of the cheeses. Repeat.

Cover with foil and bake for 45 minutes
