Snowballs
A classic recipe from Newfoundland that is loaded with coconut and chocolate! Chocolate Snowball Cookies are a must have for Christmas baking.
Servings 4 dozen
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup milk
- 3 tbsp cocoa powder
- 2 cups rolled oats
- 1 cup fine coconut
- coconut for rolling
Instructions
- In a large saucepan over medium-high heat, bring butter, sugar and milk to a boil
- Allow to boil for about 5 minutes without stirring (should be at a rolling boil) while you let this boil mix together your rolled oats and coconut and set to the side
- Add cocoa and remove from the heat
- Add in coconut/oat mixture and stir to combine with the wet mixture
- Let cool and roll ball in coconut to coat
